Ingredients

  • 1 pound crawfish tails, cooked and peeled
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • 1/2 cup diced jalapeno pepper
  • 1/2 cup diced tomatoes
  • 1/2 cup heavy cream
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup corn tortilla chips, crushed

Directions

  1. In a large skillet over medium heat, heat the oil. Add the onion, bell pepper, garlic powder, cumin, cayenne pepper and jalapeno pepper. Cook and stir for 5 minutes, or until vegetables are tender.
  2. Add the crawfish and tomatoes, and cook for 3 minutes.
  3. Stir in the cream and cheese, and cook for 2 minutes, or until cheese is melted.
  4. Stir in the cilantro and crushed chips.
  5. Serve hot with chips.
