Ingredients

  • 4 egg whites
  • 1 teaspoon of cream of tartar
  • 2 cups of sugar
  • 1 cup of skim milk
  • 2 tablespoons of cornstarch
  • 1 teaspoon of vanilla extract
  • 1/2 cup of butter
  • 1/2 cup of dark brown sugar
  • 1/4 cup of water

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, beat together egg whites and cream of tartar until soft peaks form.
  3. Gradually add sugar, beating until stiff peaks form.
  4. Spread meringue into an ungreased 9-inch pie plate.
  5. Bake for 20 minutes, or until golden brown.
  6. In a medium saucepan, whisk together milk, cornstarch and vanilla extract.
  7. Cook over medium heat until mixture thickens, stirring constantly.
  8. Spread custard over meringue.
  9. In a small saucepan, melt butter and brown sugar together. Add water and stir until mixture is smooth.
  10. Pour caramel over custard.
  11. Chill for 2 hours before serving.
