Ingredients
- 4 egg whites
- 1 teaspoon of cream of tartar
- 2 cups of sugar
- 1 cup of skim milk
- 2 tablespoons of cornstarch
- 1 teaspoon of vanilla extract
- 1/2 cup of butter
- 1/2 cup of dark brown sugar
- 1/4 cup of water
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, beat together egg whites and cream of tartar until soft peaks form.
- Gradually add sugar, beating until stiff peaks form.
- Spread meringue into an ungreased 9-inch pie plate.
- Bake for 20 minutes, or until golden brown.
- In a medium saucepan, whisk together milk, cornstarch and vanilla extract.
- Cook over medium heat until mixture thickens, stirring constantly.
- Spread custard over meringue.
- In a small saucepan, melt butter and brown sugar together. Add water and stir until mixture is smooth.
- Pour caramel over custard.
- Chill for 2 hours before serving.
