Ingredients
4 egg whites
1 teaspoon of cream of tartar
2 cups of sugar
1 cup of skim milk
2 tablespoons of cornstarch
1 teaspoon of vanilla extract
1/2 cup of butter
1/2 cup of dark brown sugar
1/4 cup of water
Directions
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, beat together egg whites and cream of tartar until soft peaks form.
Gradually add sugar, beating until stiff peaks form.
Spread meringue into an ungreased 9-inch pie plate.
Bake for 20 minutes, or until golden brown.
In a medium saucepan, whisk together milk, cornstarch and vanilla extract.
Cook over medium heat until mixture thickens, stirring constantly.
Spread custard over meringue.
In a small saucepan, melt butter and brown sugar together. Add water and stir until mixture is smooth.
Pour caramel over custard.
Chill for 2 hours before serving.

The name "Suspiro Limeno" is derived from the Spanish phrase meaning "Lima sigh".
This dessert is said to have been created by an 18th century Peruvian poet, Jose de la Cuadra.
Suspiro Limeno is traditionally served during special occasions such as weddings and anniversaries.
