Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups milk
  • Red and blue food coloring
  • 1 batch of vanilla frosting

Directions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Alternate adding the dry ingredients and milk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.
  6. Divide the batter equally into three bowls. Leave one bowl plain, and add a few drops of red food coloring to one bowl and blue food coloring to the other.
  7. Pour the red batter into one prepared cake pan, the plain batter into the other, and the blue batter into a piping bag fitted with a round tip.
  8. Pipe a ring of blue batter around the edge of the red batter in the pan. Carefully pour the plain batter in the center of the ring.
  9. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  11. Once the cakes are completely cooled, level the tops if necessary. Place one cake layer on a serving plate or cake stand.
  12. Spread a generous amount of vanilla frosting on top of the first layer. Place the second layer on top, and frost the entire cake with the remaining frosting.
  13. Decorate the top of the cake with red, white, and blue sprinkles or any other Independence Day-themed decorations.
  14. Slice the cake to reveal the surprise inside and serve.
