Ingredients

  • 1 package of soba noodles
  • 1/2 cup of diced tofu
  • 1/2 cup of thinly sliced bell peppers
  • 1/2 cup of shredded carrots
  • 1/4 cup of sliced scallions
  • 2 tablespoons of soy sauce
  • 1 tablespoon of sesame oil
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of honey
  • 1 teaspoon of minced ginger
  • 1 clove of garlic, minced
  • 1 tablespoon of sesame seeds, for garnish

Directions

  1. Cook the soba noodles according to package instructions. Drain and set aside.
  2. In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, minced ginger, and minced garlic to make the sauce.
  3. Heat a tablespoon of oil in a skillet over medium heat. Add diced tofu and cook until golden brown and crispy, about 5 minutes each side. Remove from the skillet and set aside.
  4. In the same skillet, add bell peppers and shredded carrots. Stir-fry for 2-3 minutes, or until the vegetables are tender-crisp.
  5. Add cooked soba noodles to the skillet and pour the sauce over them. Toss everything together until well coated.
