Ingredients
- 1 package of soba noodles
- 1/2 cup of diced tofu
- 1/2 cup of thinly sliced bell peppers
- 1/2 cup of shredded carrots
- 1/4 cup of sliced scallions
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 1 tablespoon of rice vinegar
- 1 tablespoon of honey
- 1 teaspoon of minced ginger
- 1 clove of garlic, minced
- 1 tablespoon of sesame seeds, for garnish
Directions
- Cook the soba noodles according to package instructions. Drain and set aside.
- In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, minced ginger, and minced garlic to make the sauce.
- Heat a tablespoon of oil in a skillet over medium heat. Add diced tofu and cook until golden brown and crispy, about 5 minutes each side. Remove from the skillet and set aside.
- In the same skillet, add bell peppers and shredded carrots. Stir-fry for 2-3 minutes, or until the vegetables are tender-crisp.
- Add cooked soba noodles to the skillet and pour the sauce over them. Toss everything together until well coated.
- Remove from heat and transfer the noodle mixture to a serving bowl.
