Ingredients

  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 2 tablespoons minced fresh ginger
  • 2 red chili peppers, thinly sliced
  • 4 cups chicken broth
  • 2 tablespoons tamarind paste
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons lime juice
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons chopped fresh cilantro

Directions

  1. Heat the oil in a large pot over medium heat. Add the garlic, ginger, and chili peppers; cook and stir until fragrant, about 1 minute.
  2. Add the chicken broth, tamarind paste, fish sauce, brown sugar, salt, and pepper. Bring to a boil, reduce heat to low, and simmer for 10 minutes.
  3. Stir in the lime juice and shrimp. Simmer until the shrimp are cooked through, about 5 minutes.
  4. Garnish with cilantro before serving.
