Ingredients

  • 1 cup orzo
  • 2 tablespoons olive oil
  • 1/2 cup red onion, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Directions

  1. Bring a large pot of salted water to a boil. Add the orzo and cook for 8-10 minutes, or until al dente.
  2. Drain and rinse the orzo with cold water. Transfer to a large bowl.
  3. Add the olive oil, red onion, cherry tomatoes, cucumber, parsley, mint, feta cheese, and lemon juice. Stir to combine.
  4. Season with salt and pepper to taste. Serve chilled or at room temperature.
