Ingredients

  • 2 cups arugula or mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup red onion, diced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon honey
  • 1 teaspoon dijon mustard
  • Salt and pepper to taste
  • Optional toppings: roasted nuts, dried cranberries, avocado, croutons

Directions

  1. In a large bowl, combine the arugula, tomatoes, cucumber, onion, and feta cheese.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, honey, dijon mustard, and salt and pepper.
  3. Pour the dressing over the salad and toss to combine.
