Ingredients
- 1 head of broccoli, cut into small florets
- 1/2 pound of pasta, cooked according to package instructions
- 1/4 cup of olive oil
- 2 tablespoons of white wine vinegar
- 1/4 teaspoon of sea salt
- 1/4 teaspoon of ground black pepper
- 1/4 cup of chopped fresh parsley
- 1/4 cup of crumbled feta cheese
Directions
- Bring a large pot of salted water to a boil and add the broccoli florets. Cook for 3-4 minutes until tender-crisp. Drain and set aside.
- In a large bowl, combine the cooked pasta, cooked broccoli, olive oil, vinegar, salt and pepper. Toss to combine.
- Add the parsley and feta cheese and toss until combined.
- Serve immediately or refrigerate until ready to serve.
