Ingredients

  • 2 tablespoons butter
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 2 slices bacon, diced
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons grated Parmesan cheese

Directions

  1. Melt butter in a large skillet over medium heat. Add onion and garlic; cook and stir until soft and fragrant, about 5 minutes.
  2. Add bacon; cook and stir until bacon is crisp, about 5 minutes.
  3. Stir in spinach; cook and stir until heated through, about 5 minutes.
  4. Sprinkle flour over spinach mixture; cook and stir for 1 minute.
  5. Pour milk over spinach mixture; stir to combine. Season with salt and pepper.
  6. Bring to a boil; reduce heat to low and simmer until thickened, about 5 minutes.
  7. Stir in Parmesan cheese. Serve hot.
