Country Captain Chicken with Rice
Ingredients
1 10-ounce package frozen spinach, thawed and squeezed dry
1 14-ounce can artichoke hearts, drained and chopped
1/2 cup feta cheese, crumbled
1/4 cup grated Parmesan cheese
1/4 cup mayonnaise
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon black pepper
1/2 cup Italian-style breadcrumbs
1/4 cup olive oil
Directions
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, mix together spinach, artichoke hearts, feta cheese, Parmesan cheese, mayonnaise, garlic powder, onion powder, and black pepper.
Form mixture into 1-inch balls, and roll in Italian-style breadcrumbs to coat.
Heat olive oil in a large skillet over medium heat. Add spinach-artichoke balls, and cook until golden brown, about 5 minutes.
Place the fried balls onto a baking sheet, and bake in preheated oven until heated through, about 10 minutes.
Interesting Facts
These spinach-artichoke balls are great served as an appetizer or a side dish.
You can also make them ahead of time, and freeze them for later use.
These balls can also be cooked in an air fryer, for a healthier option.
