Ingredients

  • 1/4 cup vegetable oil
  • 2 lbs chicken thighs, cut into 1-inch cubes
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup dry white wine
  • 1 (14.5 oz) can diced tomatoes, drained
  • 1/2 cup raisins
  • 1/2 cup slivered almonds
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • Salt and pepper, to taste

Directions

  1. Heat the oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown, about 7-10 minutes.
  2. Add the onion and garlic and cook until softened, about 3 minutes.
  3. Add the ginger, curry powder, cumin, cinnamon, nutmeg, and cayenne pepper and cook until fragrant, about 1 minute.
  4. Add the wine, tomatoes, raisins, and almonds and stir to combine. Simmer for 10 minutes.
  5. Add the rice and chicken broth and stir to combine. Bring to a boil, reduce heat to a simmer, cover, and cook for 20 minutes, or until the rice is cooked through.
  6. Season to taste with salt and pepper and serve.
