Ground Beef Casserole with Potatoes and Cabbage

Ingredients

  • 1 lb. ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups potatoes, peeled and diced
  • 1/2 head cabbage, shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 cup beef broth

Directions

  1. Preheat oven to 350 degrees F.
  2. In a large skillet over medium-high heat, cook beef, onion and garlic until beef is browned, about 5 minutes. Drain off any excess fat.
  3. Add potatoes, cabbage, salt, pepper, paprika and oregano to the skillet and cook for another 5 minutes, stirring occasionally.
  4. Pour in beef broth and bring to a boil. Reduce heat to low and simmer for 5 minutes.
  5. Pour mixture into a 9x13-inch baking dish and cover with aluminum foil.
  6. Bake for 25 minutes, or until potatoes are tender.
  7. Remove foil and bake for an additional 5 minutes.
  8. Serve warm.
