Ingredients

  • 1 can of chickpeas (15 ounces)
  • 1/2 onion, minced
  • 2 cloves of garlic, minced
  • 2 tablespoons of fresh parsley, chopped
  • 1 teaspoon of cumin
  • 1/2 teaspoon of coriander
  • 1 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 tablespoons of olive oil
  • 1/2 cup of Greek yogurt
  • 1/2 cucumber, chopped
  • 1 tablespoon of fresh mint, chopped
  • 1 tablespoon of fresh dill, chopped
  • 1 lemon, juiced

Directions

  1. Preheat the oven to 400 degrees F.
  2. In a food processor, combine the chickpeas, onion, garlic, parsley, cumin, coriander, salt, and pepper. Process until the mixture is smooth.
  3. Form the mixture into small balls and place them on a greased baking sheet. Drizzle with olive oil and bake for 20 minutes, or until golden brown.
  4. In a medium bowl, combine the Greek yogurt, cucumber, mint, dill, and lemon juice. Stir to combine.
  5. Serve the falafel with the cucumber sauce.
