Ingredients
- 1 can of chickpeas (15 ounces)
- 1/2 onion, minced
- 2 cloves of garlic, minced
- 2 tablespoons of fresh parsley, chopped
- 1 teaspoon of cumin
- 1/2 teaspoon of coriander
- 1 teaspoon of salt
- 1/4 teaspoon of black pepper
- 2 tablespoons of olive oil
- 1/2 cup of Greek yogurt
- 1/2 cucumber, chopped
- 1 tablespoon of fresh mint, chopped
- 1 tablespoon of fresh dill, chopped
- 1 lemon, juiced
Directions
- Preheat the oven to 400 degrees F.
- In a food processor, combine the chickpeas, onion, garlic, parsley, cumin, coriander, salt, and pepper. Process until the mixture is smooth.
- Form the mixture into small balls and place them on a greased baking sheet. Drizzle with olive oil and bake for 20 minutes, or until golden brown.
- In a medium bowl, combine the Greek yogurt, cucumber, mint, dill, and lemon juice. Stir to combine.
- Serve the falafel with the cucumber sauce.
