Ingredients

  • 2 lbs. boneless, skinless chicken breasts
  • 1 cup coconut milk
  • 2 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons minced garlic
  • 1 tablespoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons peanut oil
  • 2 tablespoons sesame oil
  • 1/4 cup chopped peanuts
  • 1/4 cup chopped fresh cilantro

Directions

  1. Cut the chicken into 1-inch cubes.
  2. In a large bowl, combine the coconut milk, brown sugar, soy sauce, garlic, coriander, cumin, turmeric, ginger, chili powder, salt and pepper. Add the chicken cubes and stir to coat. Cover and refrigerate for at least 1 hour.
  3. In a large skillet over medium-high heat, heat the peanut oil and sesame oil. Add the chicken cubes, stirring to coat with the oil. Cook for 8 to 10 minutes, stirring often, until the chicken is cooked through.
  4. Transfer the chicken to a serving platter and garnish with the chopped peanuts and cilantro.
  5. Serve warm with steamed rice.
