1 tablespoon olive oil
1 large onion, diced
2 cloves garlic, minced
3 carrots, diced
3 celery stalks, diced
2 cups vegetable broth

Salt and pepper, to taste
Directions
Heat the olive oil in a large pot over medium-high heat.

Add the vegetable broth, white beans, spinach, oregano, basil and salt and pepper. Stir to combine.
Bring the soup to a boil, then reduce heat to low and simmer for 30 minutes.
