Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 3 celery stalks, diced
  • 2 cups vegetable broth
  • 1 (15-ounce) can white beans, drained and rinsed
  • 2 cups spinach, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the onion, garlic, carrots and celery and cook until the vegetables are softened, about 5 minutes.
  3. Add the vegetable broth, white beans, spinach, oregano, basil and salt and pepper. Stir to combine.
  4. Bring the soup to a boil, then reduce heat to low and simmer for 30 minutes.
  5. Serve hot.
