Ingredients

  • 2 large flour tortillas
  • 1/2 cup ricotta cheese
  • 1/2 cup frozen spinach, thawed and drained
  • 1/2 cup canned artichoke hearts, drained and chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Preheat oven to 425°F. Grease a baking sheet with cooking spray.
  2. Lay tortillas on prepared baking sheet. Spread ricotta cheese over each tortilla, leaving a 1/2-inch border around the edges.
  3. Top with spinach, artichoke hearts, mozzarella cheese, Parmesan cheese, garlic powder, oregano, salt, and pepper.
  4. Bake for 10 minutes, or until cheese is melted and tortillas are golden brown.
  5. Cut into slices and serve hot.
