Ingredients

  • 9 lasagna noodles
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 jalapeno, seeded and minced
  • 1 zucchini, diced
  • 1 cup sliced mushrooms
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon cayenne pepper
  • Salt to taste
  • 2 cups shredded mozzarella cheese
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion, garlic, green and red bell peppers, jalapeno, zucchini, and mushrooms. Cook until the vegetables are tender, about 5 minutes.
  4. Stir in the diced tomatoes, tomato sauce, tomato paste, basil, oregano, red pepper flakes (if using), cayenne pepper, and salt. Simmer for 10 minutes, stirring occasionally.
  5. In a greased 9x13-inch baking dish, spread a thin layer of the tomato sauce mixture. Place 3 lasagna noodles on top, followed by another layer of the tomato sauce mixture. Sprinkle with a portion of the mozzarella, ricotta, and Parmesan cheeses. Repeat the layers until all the ingredients are used, ending with a layer of cheese on top.
  6. Cover the baking dish with aluminum foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is golden and bubbly.
  7. Remove the lasagna from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
  8. Serve hot and enjoy!
