  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 cup kale, chopped
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Directions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, garlic, carrot, and jalapeno pepper. Sauté until the vegetables are softened and slightly caramelized, about 5 minutes.
  3. Stir in the cumin, paprika, turmeric, chili powder, and cayenne pepper. Cook for another minute to toast the spices and enhance their flavors.
  4. Add the vegetable broth, diced tomatoes, lentils, and quinoa. Bring the mixture to a boil.
