Ingredients
- 1 pound ground turkey
- 1 large sweet potato, peeled and diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon thyme
- Salt and pepper, to taste
- 1 bay leaf
- 4 cups chicken broth
- 1/4 cup sliced okra
- 1/4 cup diced celery
- 1/4 cup diced carrots
- 1/4 cup diced tomatoes
- 1/4 cup cooked white rice
Directions
- In a large pot, cook the ground turkey over medium heat until it is browned, about 5 minutes.
- Add the sweet potato, onion, garlic, bell pepper, chili powder, smoked paprika, cumin, oregano, thyme, salt, and pepper. Cook for 5 minutes, stirring occasionally.
- Add the bay leaf, chicken broth, okra, celery, carrots, and tomatoes. Bring the mixture to a boil, then reduce the heat and simmer for 20 minutes.
- Add the cooked rice and simmer for an additional 5 minutes.
- Serve hot with crusty bread.
