Ingredients
- 3 large sweet potatoes, peeled and diced
- 1 can (20 ounces) pineapple chunks, drained
- 1/4 cup brown sugar
- 1/4 cup apple cider vinegar
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1/4 teaspoon ground cumin
- Salt and pepper to taste
Directions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine sweet potatoes, pineapple chunks, brown sugar, vinegar, olive oil, chili powder, and cumin. Stir to combine.
- Spread mixture onto a large baking sheet. Bake for 20 minutes, stirring once halfway through.
- Remove from oven and season with salt and pepper to taste. Serve warm.
