Ingredients

  • 1 pound ground pork
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup low-sodium beef broth
  • 1/2 cup Greek yogurt
  • 1/4 cup sour cream
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon cornstarch
  • 1/4 cup chopped fresh parsley

Directions

  1. In a large skillet over medium-high heat, cook the ground pork until browned and no longer pink, about 6-7 minutes.
  2. Add the onion, garlic, thyme, paprika, salt and pepper, and cook for an additional 5 minutes.
  3. Add the beef broth, yogurt, sour cream, Worcestershire sauce, and Dijon mustard, and bring to a simmer.
  4. In a small bowl, whisk together the cornstarch with 2 tablespoons of cold water. Add to the skillet and stir until the sauce thickens.
  5. Stir in the parsley and cook for an additional 2 minutes.
  6. Serve over cooked egg noodles or mashed potatoes.
