Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 tablespoons olive oil

  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeno pepper, seeded and minced
  • 1 bunch kale, stems removed and leaves chopped
  • 1 tablespoon Creole seasoning
  • 1 tablespoon apple cider vinegar
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Directions

  1. Rinse the quinoa under cold water and drain.
  2. In a saucepan, bring the water to a boil. Add the quinoa and reduce the heat to low. Cover and simmer for 15-20 minutes, or until the quinoa is cooked and the water is absorbed.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent.
  4. Add the minced garlic, diced red bell pepper, and minced jalapeno pepper to the skillet. Cook for 2-3 minutes, until the peppers are slightly softened.
  5. Add the chopped kale to the skillet and cook until wilted, about 5 minutes.
  6. Sprinkle the Creole seasoning over the kale and quinoa mixture. Stir well to combine.
  7. Drizzle the apple cider vinegar over the mixture and season with salt and pepper to taste.
  8. Remove from heat and let the flavors blend for a few minutes.
