Ingredients

  • 2 chicken breasts, thinly sliced
  • 8 oz udon noodles
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sriracha sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste
  • 4 green onions, sliced
  • Toasted sesame seeds, for garnish

Directions

  1. Cook the udon noodles according to the package instructions. Drain and set aside.
  2. In a small bowl, mix together the soy sauce, oyster sauce, sriracha sauce, and sesame oil. Set aside.
  3. Heat vegetable oil in a large skillet or wok over high heat. Add the chicken and cook until browned and cooked through. Remove from skillet and set aside.
  4. In the same skillet, add the onion, red bell pepper, yellow bell pepper, garlic, and ginger. Cook until vegetables are tender-crisp.
  5. Add the cooked udon noodles and the sauce mixture to the skillet. Toss everything together until well coated.
  6. Return the cooked chicken to the skillet and mix well.
  7. Cook for an additional 2-3 minutes, until everything is heated through.
  8. Season with salt and pepper to taste.
  9. Garnish with sliced green onions and toasted sesame seeds before serving.
