Ingredients

  • 2 cups all-purpose flour
  • 1 ¾ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 ½ cups heavy cream
  • 12 ounces semisweet chocolate, chopped
  • ⅓ cup unsalted butter
  • 1 teaspoon vanilla extract

Directions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.
  4. Gradually whisk in the boiling water until the batter is smooth. The batter will be thin, but that's normal.
  5. Pour the batter into the prepared baking pan and smooth the top with a spatula.
  6. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer the cake to a wire rack to cool completely.
  8. Meanwhile, prepare the chocolate ganache. In a medium saucepan, heat the heavy cream over medium heat until it starts to simmer.
  9. Remove the saucepan from the heat and add the chopped chocolate and butter. Stir until the chocolate and butter are completely melted and the mixture is smooth.
  10. Stir in the vanilla extract and let the ganache cool for about 30 minutes, stirring occasionally.
  11. Once the ganache has cooled and thickened slightly, pour it over the cooled cake and spread it evenly with a spatula.
  12. Allow the ganache to set at room temperature for about 1 hour or refrigerate for faster setting.
  13. Slice the cake into squares and serve it on a dessert plate. Enjoy!
