- 2 cups shrimp or tofu, peeled and deveined
- 4 cups chicken or vegetable broth

- 1 teaspoon chili paste
- 2 cloves garlic, minced
- 1 inch piece ginger, grated
- 1 lemongrass stalk, sliced
- 1 cup mushrooms, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup bamboo shoots, sliced
- 1/4 cup cilantro, chopped
- 2 green onions, sliced
- 1 red chili, sliced
- Salt, to taste

Directions
- In a large pot, heat some oil over medium-high heat. Add the minced garlic, grated ginger, and sliced lemongrass. Cook for a minute or until fragrant.
