- 1 lb ground beef
- 8 oz chorizo sausage, casing removed
- 1 onion, diced
- 3 cloves garlic, minced
- 1 green bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp oregano
- 1/4 tsp cayenne pepper (optional, for extra heat)
- 1/4 cup unsweetened cocoa powder
- Salt and pepper, to taste
- Toppings: shredded cheese, sour cream, avocado, green onions, cilantro
Directions
- In a large pot or Dutch oven, brown the ground beef and chorizo sausage over medium heat. Break it up into small pieces with a spoon while cooking.
- Once the meat is browned, add the diced onion, garlic, and green bell pepper. Cook until the vegetables are tender, about 5 minutes.
- Add the diced tomatoes, tomato sauce, kidney beans, pinto beans, chili powder, cumin, paprika, oregano, cayenne pepper (if using), cocoa powder, salt, and pepper. Stir well to combine.
- Bring the chili to a simmer, then reduce the heat to low. Cover and let it cook for 1 hour, stirring occasionally to prevent sticking.
