This recipe combines the bold flavors of harissa with the salty and creamy halloumi cheese, all sandwiched between two crispy slices of bread. Perfect for a quick and satisfying lunch or dinner.

Ingredients

  • 8 slices of sourdough bread
  • 1 block of halloumi cheese, sliced
  • 2 tbsp harissa paste
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1/2 red onion, thinly sliced
  • Handful of fresh arugula
  • Salt and pepper to taste

Directions

  1. Heat a panini press or a large skillet over medium heat.
  2. Brush one side of each slice of bread with olive oil.
  3. Spread harissa paste on the other side of 4 slices of bread.
  4. Layer halloumi cheese, red bell pepper, red onion, arugula, salt, and pepper on top of the harissa spread slices.
  5. Top with the remaining slices of bread, oiled side facing out.
  6. Place the sandwiches in the panini press or skillet and cook until the bread is crispy and the cheese is melted, about 5-7 minutes.
  7. Serve hot and enjoy!
