Ingredients
- 8 slices of sourdough bread
- 1 block of halloumi cheese, sliced
- 2 tbsp harissa paste
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1/2 red onion, thinly sliced
- Handful of fresh arugula
- Salt and pepper to taste
Directions
- Heat a panini press or a large skillet over medium heat.
- Brush one side of each slice of bread with olive oil.
- Spread harissa paste on the other side of 4 slices of bread.
- Layer halloumi cheese, red bell pepper, red onion, arugula, salt, and pepper on top of the harissa spread slices.
- Top with the remaining slices of bread, oiled side facing out.
- Place the sandwiches in the panini press or skillet and cook until the bread is crispy and the cheese is melted, about 5-7 minutes.
