In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg and salt. Set aside.
In a medium bowl, whisk together the maple syrup, milk, eggs, butter and vanilla extract. Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix.
Heat a large pan or griddle over medium heat. Grease with butter or oil. Pour the batter into the pan, about 1/4 cup for each pancake. Cook for about 3 minutes, until the edges of the pancakes are golden brown. Flip and cook for another 2 minutes, or until the pancakes are cooked through.
Serve warm with extra maple syrup, if desired.
