Ingredients

  • 1 lb white fish fillets
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp chipotle powder
  • 1 tsp cumin
  • 1 tsp paprika

  • 1/4 tsp black pepper
  • 8 small flour tortillas
  • 1 cup corn kernels
  • 1/2 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeno, seeded and diced
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Directions

  1. In a small bowl, whisk together olive oil, lime juice, minced garlic, chipotle powder, cumin, paprika, salt, and black pepper to make the marinade.
  2. Place the fish fillets in a shallow dish and pour the marinade over them. Ensure the fish is evenly coated. Let it marinate for 15-20 minutes.
  3. While the fish is marinating, prepare the corn salsa. In a medium bowl, combine corn kernels, diced red bell pepper, diced red onion, chopped cilantro, jalapeno, lime juice, olive oil, salt, and pepper. Mix well and refrigerate until ready to use.
