Ingredients

  • 1 lb white fish fillets
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp chipotle powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 small flour tortillas
  • 1 cup corn kernels
  • 1/2 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeno, seeded and diced
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • Optional toppings: sliced avocado, sour cream, shredded lettuce

Directions

  1. In a small bowl, whisk together olive oil, lime juice, minced garlic, chipotle powder, cumin, paprika, salt, and black pepper to make the marinade.
  2. Place the fish fillets in a shallow dish and pour the marinade over them. Ensure the fish is evenly coated. Let it marinate for 15-20 minutes.
  3. While the fish is marinating, prepare the corn salsa. In a medium bowl, combine corn kernels, diced red bell pepper, diced red onion, chopped cilantro, jalapeno, lime juice, olive oil, salt, and pepper. Mix well and refrigerate until ready to use.
  4. Preheat your grill or a grill pan over medium heat. Lightly grease the grill grates.
  5. Remove the fish from the marinade and grill for 4-5 minutes per side, or until cooked through and flaky. Remove from the grill and let it rest for a few minutes before slicing into strips.
  6. Warm the flour tortillas on the grill or in a dry skillet over medium heat for about 30 seconds per side.
  7. To assemble the tacos, place a few slices of the grilled fish on each tortilla. Top with a generous spoonful of the corn salsa. Add any desired toppings, such as sliced avocado, sour cream, or shredded lettuce.
  8. Serve the fiery fish tacos immediately and enjoy!
