Ingredients

  • 2 cups sauerkraut, drained
  • 1 pound ground beef

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 3/4 cup milk
  • 1 egg, beaten

Directions

  1. In a skillet, cook the ground beef and onion until the beef is browned and the onion is softened.
  2. Add the sauerkraut, caraway seeds, salt, and black pepper to the skillet. Cook for an additional 5 minutes, stirring occasionally. Set aside.
  3. In a large mixing bowl, combine the flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Gradually add the milk to the flour mixture, stirring until a soft dough forms.
  5. Turn the dough onto a lightly floured surface and knead it for a few minutes until smooth.
  6. Divide the dough into 8 equal portions and roll each portion into a small circle.
  7. Place a spoonful of the sauerkraut and beef filling onto each dough circle.
  8. Fold the dough over the filling, forming half-moon shapes. Press the edges firmly to seal the bierocks.
  9. Place the filled bierocks on a baking sheet lined with parchment paper.
  10. Brush the tops of the bierocks with beaten egg.
  11. Bake in a preheated oven at 375°F (190°C) for 25-30 minutes, or until golden brown.
