These kingfish enchiladas are a fresh and flavorful twist on a classic Mexican dish. The tender kingfish pairs perfectly with the spicy enchilada sauce and melted cheese. It's a dish that is sure to impress your family and friends!

Ingredients

  • 1 lb kingfish fillets, cut into small pieces
  • 10 corn tortillas
  • 1 cup shredded cheddar cheese
  • 1 can of enchilada sauce
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves of garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Directions

  1. Preheat your oven to 350°F.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion, bell pepper, and garlic. Cook until softened, about 5 minutes.
  3. Add the kingfish pieces to the skillet and season with cumin, chili powder, salt, and pepper. Cook until the fish is cooked through, about 5-7 minutes.
  4. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  5. Fill each corn tortilla with the fish mixture and roll it up. Place the enchiladas in the baking dish.
  6. Pour the remaining enchilada sauce over the top of the enchiladas and sprinkle with shredded cheddar cheese.
