Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground nutmeg
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup chopped crystallized ginger
Directions
- Preheat oven to 375°F.
- In a medium bowl, whisk together the flour, baking powder, nutmeg, ginger and cinnamon. Set aside.
- In a large bowl, beat the butter and sugars until light and creamy. Add the egg and vanilla and beat until combined.
- Gradually add the dry ingredients to the wet ingredients and beat until just combined.
- Stir in the crystallized ginger.
- Drop the dough by rounded tablespoons onto ungreased baking sheets.
- Bake for 10-12 minutes or until the edges are lightly golden brown.
- Remove from oven and let cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
