Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon ground turmeric
  • 2 cups vegetable broth
  • 2 cups diced kalabasa (calabash or squash)
  • 1 cup diced long beans (string beans)
  • 1 cup guinataan (a type of Filipino tamarind sauce)
  • 1 cup sitar (a type of Filipino vinegar)
  • Salt to taste

Directions

  1. Heat oil in a large pot over medium-high heat. Add onion and garlic and cook until softened, about 5 minutes.
  2. Add fish sauce, soy sauce, tomato paste, pepper, and turmeric and cook for another minute.
  3. Add broth, kalabasa, long beans, guinataan, and sitar and stir to combine. Bring to a boil, then reduce heat to low and simmer for 20 minutes.
  4. Add salt to taste and serve hot.
