Ingredients
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons fish sauce
- 2 tablespoons soy sauce
- 1 tablespoon tomato paste
- 1 teaspoon freshly ground black pepper
- 1 teaspoon ground turmeric
- 2 cups vegetable broth
- 2 cups diced kalabasa (calabash or squash)
- 1 cup diced long beans (string beans)
- 1 cup guinataan (a type of Filipino tamarind sauce)
- 1 cup sitar (a type of Filipino vinegar)
- Salt to taste
Directions
- Heat oil in a large pot over medium-high heat. Add onion and garlic and cook until softened, about 5 minutes.
- Add fish sauce, soy sauce, tomato paste, pepper, and turmeric and cook for another minute.
- Add broth, kalabasa, long beans, guinataan, and sitar and stir to combine. Bring to a boil, then reduce heat to low and simmer for 20 minutes.
- Add salt to taste and serve hot.
