Ingredients

  • 4 cups watermelon rinds, cut into cubes
  • 2 cups white vinegar

  • 1 teaspoon fresh dill, chopped

Directions

  1. In a large pot, combine the vinegar, water, sugar, salt, peppercorns, bay leaves, and dill.
  2. Bring the mixture to a boil, stirring to dissolve the sugar.
  3. Add the watermelon rinds to the pot and reduce the heat to a simmer.
  4. Simmer for 5 minutes, stirring occasionally.
  5. Remove the pot from the heat and let the rinds cool in the liquid.
  6. Transfer the rinds and liquid to a container with a lid and refrigerate overnight.
  7. Serve cold or at room temperature.
