Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1/2 cup bacon, diced
  • 1/2 cup mushrooms, diced
  • 1/2 cup heavy cream
  • 1 tablespoon garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Directions

  1. In a large skillet over medium heat, add the olive oil and butter. Add the bacon and mushrooms and cook until the bacon is crispy and the mushrooms are golden brown. Remove from the heat and set aside.
  2. In a separate skillet over medium heat, add the chicken thighs and season with salt and pepper. Cook for 8-10 minutes or until the skin is golden brown and the chicken is cooked through. Remove from the heat and set aside.
  3. Add the bacon and mushroom mixture back to the skillet and stir in the garlic and Italian seasoning. Cook for 2 minutes or until fragrant. Add the heavy cream and stir until the sauce is thick and creamy.
  4. Return the chicken thighs to the skillet and spoon the sauce over the chicken. Cook for 5-7 minutes or until the chicken is fully cooked and the sauce is thick. Serve warm.
