Ingredients
- 1 lb. cooked shrimp, peeled and deveined
- 1 large jicama, peeled and cut into cubes
- 1/4 cup fresh lime juice
- 1/4 cup chile vinegar
- 1/4 cup olive oil
- 1/4 cup chopped fresh cilantro
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
Directions
- In a large bowl, combine the shrimp, jicama, and lime juice.
- In a separate bowl, mix together the chile vinegar, olive oil, cilantro, salt, and pepper. Pour the dressing over the shrimp mixture and stir to coat.
- Refrigerate for at least 30 minutes before serving.
