Ingredients

  • 1 lb. cooked shrimp, peeled and deveined
  • 1 large jicama, peeled and cut into cubes
  • 1/4 cup fresh lime juice
  • 1/4 cup chile vinegar
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

Directions

  1. In a large bowl, combine the shrimp, jicama, and lime juice.
  2. In a separate bowl, mix together the chile vinegar, olive oil, cilantro, salt, and pepper. Pour the dressing over the shrimp mixture and stir to coat.
  3. Refrigerate for at least 30 minutes before serving.
