Ingredients

  • 1 whole mutton leg, approximately 2 kg
  • 6 cloves of garlic, minced
  • 2 tablespoons ginger paste
  • 2 tablespoons red chili powder
  • 1 tablespoon turmeric powder
  • 1 tablespoon coriander powder
  • 1 tablespoon cumin powder
  • 1 tablespoon garam masala
  • 1 tablespoon lemon juice
  • 1 cup plain yogurt
  • Salt to taste
  • 4 tablespoons vegetable oil
  • Fresh coriander leaves for garnish

Directions

  1. Using a sharp knife, make deep diagonal cuts on the surface of the mutton leg to allow the marinade to penetrate.
  2. In a mixing bowl, combine the minced garlic, ginger paste, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala, lemon juice, and yogurt. Mix well to form a smooth paste.
  3. Rub the marinade all over the mutton leg, ensuring it gets into the cuts. Massage the meat gently to make sure the marinade is evenly distributed.
  4. Cover the mutton leg with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.
  5. Preheat the oven to 180°C (350°F).
  6. Heat the vegetable oil in a large oven-safe pan or roasting tray over medium heat.
  7. Place the marinated mutton leg in the pan and sear it on all sides until browned, about 5 minutes per side.
  8. Cover the pan with aluminum foil and transfer it to the preheated oven.
  9. Roast the mutton leg for 1 hour and 30 minutes, or until the meat is tender and cooked through. Baste the leg with its own juices occasionally during roasting to keep it moist.
  10. Remove the pan from the oven and let the mutton leg rest for 10-15 minutes before carving.
  11. Garnish with fresh coriander leaves and serve hot with naan or rice.
  12. Enjoy the succulent and flavorful Special Mutton Leg Roast with your loved ones!
  13. Note: You can also prepare this recipe using a grill or barbecue for a smoky flavor.
