Learn how to make a flavorful tomato concasse that can be used as a base for many dishes. This quick and easy recipe combines fresh tomatoes with aromatic herbs and spices to create a versatile sauce that will enhance any meal. Perfect for pasta, pizza, or simply served on toasted bread as a bruschetta topping. You'll love the vibrant flavors and simplicity of this homemade tomato concasse!

Ingredients

  • 4 ripe tomatoes
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish

Directions

  1. Bring a pot of water to a boil. Score an 'X' on the bottom of each tomato with a sharp knife.
  2. Place the tomatoes in the boiling water for about 30 seconds, then remove and transfer them to a bowl of ice water. This will make it easier to peel off the skin.
  3. Once the tomatoes are cool, peel off the skin and discard. Cut the tomatoes in half and remove the seeds with a spoon. Dice the tomatoes into small chunks.
  4. Heat olive oil in a skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  5. Add the diced tomatoes, dried oregano, dried basil, and dried thyme to the skillet. Stir well to combine.
  6. Season with salt and pepper to taste. Bring the mixture to a simmer and cook for about 10 minutes, or until the tomatoes have softened and the flavors have melded together.
  7. Remove from heat and let the tomato concasse cool slightly.
  8. Serve the tomato concasse warm or at room temperature. Garnish with fresh basil leaves.
  9. Enjoy as a sauce for pasta, pizza, or as a bruschetta topping. It can also be used as a base for soups, stews, or any other dish that calls for a tomato-based sauce.
