Ingredients
- 1 pound white asparagus
- 8 ounces smoked salmon, thinly sliced
- 2 tablespoons olive oil
- 2 tablespoons freshly squeezed lemon juice
- Salt and pepper to taste
- 1/4 cup capers, drained
- 2 tablespoons chopped fresh dill
- 1/4 cup thinly sliced red onion
Directions
- Bring a large pot of salted water to a boil. Add the asparagus and cook until just tender, about 5 minutes. Drain and rinse with cold water to stop the cooking process. Set aside to cool.
- In a large bowl, combine the olive oil, lemon juice, salt, and pepper. Add the asparagus, smoked salmon, capers, dill, and red onion. Toss to combine.
- Serve the salad chilled or at room temperature. Enjoy!
