Ingredients

  • 1 pound white asparagus
  • 8 ounces smoked salmon, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • Salt and pepper to taste
  • 1/4 cup capers, drained
  • 2 tablespoons chopped fresh dill
  • 1/4 cup thinly sliced red onion

Directions

  1. Bring a large pot of salted water to a boil. Add the asparagus and cook until just tender, about 5 minutes. Drain and rinse with cold water to stop the cooking process. Set aside to cool.
  2. In a large bowl, combine the olive oil, lemon juice, salt, and pepper. Add the asparagus, smoked salmon, capers, dill, and red onion. Toss to combine.
  3. Serve the salad chilled or at room temperature. Enjoy!
