Ingredients

  • 4 carrots, chopped
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 3 tablespoons of fresh coriander, chopped
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • Salt and pepper to taste
  • 4 cups of vegetable broth
  • 1 tablespoon of olive oil

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions and garlic and cook, stirring occasionally, until the onions are softened, about 5 minutes.
  3. Add the carrots, coriander, cumin, and ground coriander. Cook, stirring occasionally, for another 5 minutes.
  4. Add the vegetable broth, bring to a boil and then reduce heat and simmer for 15 minutes.
  5. Using an immersion blender, blend the soup until smooth.
  6. Season with salt and pepper to taste.
  7. Serve warm.
