Ingredients
- 4 carrots, chopped
- 1 onion, chopped
- 2 cloves of garlic, minced
- 3 tablespoons of fresh coriander, chopped
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- Salt and pepper to taste
- 4 cups of vegetable broth
- 1 tablespoon of olive oil
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the onions and garlic and cook, stirring occasionally, until the onions are softened, about 5 minutes.
- Add the carrots, coriander, cumin, and ground coriander. Cook, stirring occasionally, for another 5 minutes.
- Add the vegetable broth, bring to a boil and then reduce heat and simmer for 15 minutes.
- Using an immersion blender, blend the soup until smooth.
- Season with salt and pepper to taste.
- Serve warm.
