Ingredients

  • 4 large flour tortillas
  • 1 can black beans, rinsed and drained
  • 1/2 cup of cooked white rice
  • 1/2 cup of salsa
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of diced tomatoes
  • 1/4 cup of diced red onions
  • 1/4 cup of sliced black olives
  • 1/4 cup of chopped fresh cilantro
  • 1/4 cup of sour cream
  • 1/4 cup of guacamole

Directions

  1. Preheat oven to 350°F.
  2. Spray a 9x13-inch baking dish with non-stick cooking spray.
  3. Lay one tortilla in the bottom of the prepared baking dish.
  4. Spread a layer of black beans over the tortilla.
  5. Sprinkle a layer of cooked rice over the beans.
  6. Spread a layer of salsa over the rice.
  7. Top with a layer of shredded cheese.
  8. Repeat the above layering process with remaining tortillas, beans, rice, and salsa.
  9. Top with the remaining cheese.
  10. Bake for 25 minutes or until cheese is melted and bubbly.
  11. Top with diced tomatoes, red onions, black olives, cilantro, sour cream, and guacamole.
  12. Serve warm.
