Ingredients
- 4 large flour tortillas
- 1 can black beans, rinsed and drained
- 1/2 cup of cooked white rice
- 1/2 cup of salsa
- 1 cup of shredded cheddar cheese
- 1/2 cup of diced tomatoes
- 1/4 cup of diced red onions
- 1/4 cup of sliced black olives
- 1/4 cup of chopped fresh cilantro
- 1/4 cup of sour cream
- 1/4 cup of guacamole
Directions
- Preheat oven to 350°F.
- Spray a 9x13-inch baking dish with non-stick cooking spray.
- Lay one tortilla in the bottom of the prepared baking dish.
- Spread a layer of black beans over the tortilla.
- Sprinkle a layer of cooked rice over the beans.
- Spread a layer of salsa over the rice.
- Top with a layer of shredded cheese.
- Repeat the above layering process with remaining tortillas, beans, rice, and salsa.
- Top with the remaining cheese.
- Bake for 25 minutes or until cheese is melted and bubbly.
- Top with diced tomatoes, red onions, black olives, cilantro, sour cream, and guacamole.
- Serve warm.
