Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 2 cups clamicken, diced
  • 3 cups potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, celery and garlic and cook until softened, about 5 minutes.
  3. Add the clamicken and potatoes and cook for another 5 minutes.
  4. Add the chicken broth, thyme, smoked paprika, garlic powder, onion powder, and salt and pepper. Bring to a boil, reduce heat, and simmer for 20 minutes.
  5. Adjust the seasonings, if necessary, and serve.
