Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 stalks celery, chopped
- 2 cloves garlic, minced
- 2 cups clamicken, diced
- 3 cups potatoes, peeled and diced
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, celery and garlic and cook until softened, about 5 minutes.
- Add the clamicken and potatoes and cook for another 5 minutes.
- Add the chicken broth, thyme, smoked paprika, garlic powder, onion powder, and salt and pepper. Bring to a boil, reduce heat, and simmer for 20 minutes.
- Adjust the seasonings, if necessary, and serve.
