Pears and Dried Fruits in a Tagine

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 2 pears, diced
  • 1 cup dried apricots
  • 1 cup dried figs
  • 1/2 cup prunes
  • 2 cups vegetable broth
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large tagine or Dutch oven over medium heat.
  2. Add the onion and garlic and cook, stirring occasionally, until softened, about 5 minutes.
  3. Add the cumin, coriander, cinnamon, and ginger and cook, stirring, for 1 minute.
  4. Add the pears, dried apricots, figs, and prunes and cook, stirring, for 2 minutes.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce the heat to low and simmer, stirring occasionally, until the fruit is softened, about 20 minutes.
  7. Season with salt and pepper, to taste.
  8. Serve warm.
