Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 2 pears, diced
- 1 cup dried apricots
- 1 cup dried figs
- 1/2 cup prunes
- 2 cups vegetable broth
- Salt and pepper, to taste
Directions
- Heat the olive oil in a large tagine or Dutch oven over medium heat.
- Add the onion and garlic and cook, stirring occasionally, until softened, about 5 minutes.
- Add the cumin, coriander, cinnamon, and ginger and cook, stirring, for 1 minute.
- Add the pears, dried apricots, figs, and prunes and cook, stirring, for 2 minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat to low and simmer, stirring occasionally, until the fruit is softened, about 20 minutes.
- Season with salt and pepper, to taste.
- Serve warm.
