Smashed Rosemary Potatoes

Ingredients

  • 2 lbs. small potatoes, scrubbed
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Directions

  1. Preheat oven to 375°F.
  2. Place potatoes in a medium-sized pot and cover with cold water. Bring to a boil, then reduce heat and simmer for 10 minutes.
  3. Drain potatoes and spread on a baking sheet. Using a potato masher, press down on each potato to flatten slightly.
  4. In a small bowl, mix together garlic, olive oil, rosemary, salt, and pepper. Drizzle over potatoes.
  5. Bake in preheated oven for 30 minutes, or until golden brown and crispy.
