Ingredients

  • 4-6 chicken thighs
  • 1/2 cup chicken broth
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup white vinegar
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup cornstarch
  • 1/4 cup cold water
  • 2 tablespoons vegetable oil
  • 1 bell pepper, diced
  • 1 onion, diced
  • Salt and pepper, to taste

Directions

  1. Season the chicken thighs with salt and pepper.
  2. Combine the chicken broth, soy sauce, brown sugar, white vinegar, garlic, ginger, and red pepper flakes in a medium bowl and whisk until well combined.
  3. In a small bowl, whisk together the cornstarch and cold water until well combined.
  4. Heat the vegetable oil in a large skillet over medium-high heat. Add the bell pepper and onion and cook until softened, about 5 minutes.
  5. Add the chicken thighs to the skillet and cook until lightly browned, about 3 minutes per side.
  6. Transfer the chicken thighs to a slow cooker. Pour the sauce over the chicken and add the cooked vegetables. Stir to combine.
  7. Cover the slow cooker and cook on low heat for 4-5 hours or until the chicken is cooked through and tender.
  8. Once the chicken is cooked, add the cornstarch slurry to the slow cooker and stir to combine. Cover and cook for an additional 15 minutes or until the sauce has thickened.
  9. Serve the chicken with rice or your favorite side dish.
