Ingredients

  • 1 pound lean ground beef
  • 1 cup bread crumbs
  • 1 egg, lightly beaten
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon Worcestershire sauce
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 can (14-15 ounces) diced tomatoes
  • 1/2 cup ketchup

Directions

  1. In a large bowl, combine the ground beef, bread crumbs, egg, salt, pepper, and Worcestershire sauce. Mix until all ingredients are combined.
  2. Shape the mixture into a loaf. Place the loaf in a slow cooker.
  3. In a medium bowl, combine the onion, bell pepper, tomatoes, and ketchup. Pour the mixture over the meatloaf in the slow cooker.
  4. Cover and cook on low heat for 6-8 hours.
  5. Serve with mashed potatoes or rice.
