Ingredients

  • 2 pounds firm white fish such as cod, halibut, or haddock
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 potatoes, peeled and diced
  • 2 cups chicken or vegetable broth
  • 1 (14-ounce) can evaporated milk
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley

Directions

  1. Place the fish, onion, garlic, potatoes, broth, evaporated milk, cream, thyme, and salt and pepper in a slow cooker.
  2. Cover and cook on low heat for 6-8 hours.
  3. Stir in the parsley and serve.
