Ingredients

  • 1 dressed squirrel (4-5 pounds)
  • 4 tablespoons butter
  • 6 cloves garlic, minced
  • 1 large onion, diced
  • 2 carrots, diced
  • 1 stalk celery, diced
  • 1 cup beef stock
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste

Directions

  1. Cut the squirrel into serving-sized pieces.
  2. In a large skillet, melt the butter over medium-high heat. Add the garlic, onion, carrots and celery. Cook, stirring occasionally, until the vegetables are soft, about 5 minutes.
  3. Place the squirrel pieces in a slow cooker. Top with the cooked vegetables. Add the beef stock, Worcestershire sauce, thyme and rosemary. Season with salt and pepper.
  4. Cover and cook on low for 6-8 hours, or until the meat is tender.
  5. Serve and enjoy.
