In a large bowl, combine the olive oil, garlic powder, oregano, thyme and salt and pepper. Add the chicken breasts and toss to coat.
Place the chicken breasts on a baking sheet and bake in the preheated oven for 15 minutes.
Add the carrots and potatoes to the baking sheet and bake for an additional 10 minutes, or until the chicken is cooked through and the vegetables are tender.
Serve hot with your favorite side dish.
