Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 2 tablespoons ghee or oil
  • 1 teaspoon cumin seeds
  • 1 small onion, finely chopped
  • 1 green chili, slit
  • 1-inch ginger, grated
  • 2 cloves garlic, minced
  • Salt to taste
  • Fresh cilantro leaves for garnish

Directions

  1. Rinse the basmati rice under cold water until the water runs clear. Drain well.
  2. In a large saucepan, heat the ghee or oil over medium heat.
  3. Add the cumin seeds and let them splutter for a few seconds.
  4. Add the chopped onion, green chili, grated ginger, and minced garlic. Saute until the onions turn golden brown.
  5. Add the rinsed and drained basmati rice to the pan. Stir well to coat the rice with the spices.
  6. Pour in the water and season with salt. Give it a gentle stir.
  7. Bring the mixture to a boil. Once it starts boiling, reduce the heat to low and cover the pan with a tight-fitting lid.
  8. Simmer for about 15-20 minutes or until the rice is cooked and all the water is absorbed. Avoid opening the lid during this time.
  9. Turn off the heat and let the rice sit covered for another 5 minutes.
  10. Remove the lid and fluff the rice gently with a fork. Garnish with fresh cilantro leaves.
  11. Serve hot with your favorite curry or gravy dish.
